A distinctive aspect of Japanese cuisine is its inclusion of raw fish dishes like sashimi and sushi. You may already be familiar with popular choices like tuna bowls and sushi from Japanese restaurants. However, today I’d like to introduce you to another must-try raw fish dish.

Have you heard of Shirasu? Known in English as whitebait or baby sardine, this fish might not be widely recognized, but it enjoys popularity in countries like Italy, New Zealand, and China as well, where it’s used as a topping on pizzas or in omelettes. In Japan, we enjoy it differently, either raw or boiled, served over rice in a dish called Shirasu-don, or “Whitebait Bowl.”

The best Shirasu is found fresh near harbors, as its flavor diminishes if it’s not fresh. If you’re looking to try this delicacy, I recommend “Yamagen,” a restaurant located in “Sakana Hiroba” (Fish Village), in the southern area of Aichi Prefecture. This spot offers an authentic taste of this unique Japanese dish.

The manager of this restaurant brings a vibrant energy that’s sure to lift your spirits. When you visit, you’ll find a variety of dishes to choose from, but I highly recommend the “3-color bowl.” This dish features a combination of raw and boiled whitebait, small shrimps, and a raw egg, all served over rice.

What makes the experience truly unique is the manager’s voice, broadcast throughout the restaurant on a radio system he installed himself. He provides a guided tasting experience, explaining in three steps how to best enjoy the bowl: first with salt, then with soy sauce, and finally with sesame oil. His lively commentary adds a special touch to the meal.

The restaurant is only open on Saturday and Sunday mornings, and it’s advisable to get there early as it tends to get quite crowded. This lively atmosphere, combined with delicious food and the manager’s enthusiastic guidance, creates a memorable dining experience.
